Sparky - Peas & Figs Resident Chef
Sparky has been cooking for over 20 years. His knowledge of cuisine has been gained in kitchens all over the world, including The Channel Islands, Dubai, France and the Caribbean before returning to the UK and working in some of the top restaurants in London as sous chef and then as head chef. About five years ago, Sparky chose to alter his professional relationship with the food industry by doing a BTEC National Certificate in Agriculture, during which he studied organic and biodynamic agricultural practices, including horticulture, animal husbandry and sustainable farming principles. Since completing this qualification he has volunteered on farms around Britain in order to gain experience in dealing with food at its source. He has played pivotal roles in community food growing and educational projects. Sparky now runs his own business, source2sauce, demonstrating, teaching the preparation of and cooking healthy and delicious food. Peas & Figs are proud and delighted that Sparky has agreed to share his varied expertise in good food and joins us as one of our resident chefs.
