Avocado, Sun Dried Tomato, Rocket and Pine Nut Salad Recipe

A delicious and fresh salad.

Method

1. Place all the ingredients for the dressing in a small jar and shake well.

2. Mix all the salad ingredients together and dress with the vinaigrette just before eating.

Serves: 2 people

Ingredients

Salad:

1 ripe avocado (sliced)

50g sun dried tomatoes (chopped)

½ small red onion (sliced)

2 tbls pine nuts

50g rocket

1 carrot  (peeled and sliced into ribbons)

 

Vinaigrette:

1 tsp Dijon mustard

2 tbls white wine vinegar

3 tbls olive oil

3 tbls sunflower oil

Salt and pepper

12 basil leaves (finely shredded)

Equipment / Utensils

Vegetable peeler (used to slice the carrots into ribbons).
