Gazpacho Recipe

Recipe by Sparky - Peas & Figs Resident Chef

This traditional soup is delicious, fresh, and very healthy. A truly beautiful dish for serving ice-cold during the summer months, being particulary refreshing on those days when the sunshine comes out to play.

1.  Place all the ingredients into a blender and blend on high speed.

2.  If you like your Gazpacho really smooth or your blender struggles to get it smooth, then press the blended mixture through a fine sieve.

3.  Place into the fridge to chill overnight.
