1. Place all the ingredients into a blender and blend on high speed.
2. If you like your Gazpacho really smooth or your blender struggles to get it smooth, then press the blended mixture through a fine sieve.
3. Place into the fridge to chill overnight.

1 x 400g tin peeled plum tomatoes
½ cucumber (peeled and roughly chopped)
1 clove garlic (crushed)
1 green pepper (roughly chopped)
½ onion (peeled and roughly chopped)
1 small green chilli (optional)
½ bunch fresh basil (approx 20 leaves)
50ml extra virgin olive oil
2 tbls white wine vinegar
Salt and pepper
4 tbls water
