Grilled Chicken Salad with Sweet Potato Recipe

Method

1. Season (with salt and pepper) and place the chicken thighs on a tray with the skin side down alongside the sweet potatoes in a hot oven for 40 minutes. 

2. When cool peel and slice the sweet potatoes and pull the meat from the chicken thigh.

3. Place all the dressing ingredients in a small jar shake well just before using.

4. Mix the salad ingredients together and dress with the dressing.

5. Place the chicken on top and serve.

Salad:

2 sweet potatoes

2 chicken thighs

2 handfuls of mixed leaves (100g)

12 cherry tomatoes (halved)

Salt and pepper

 

Dressing:

2 tbls sunflower oil

2 tbls olive oil

2 tbls balsamic vinegar
