Quinoa Tabbouleh Recipe

1. Bring 400ml of water and a pinch of salt to the boil.  Reduce to a medium heat, add the quinoa and simmer for 14 minutes until the water has gone and the quinoa is soft. 

2. Mix all ingredients together and add salt and pepper for seasoning.

3. Serve with rye crackers.

160g quinoa

2 large vine ripened tomatoes (diced)

1 small bunch of mint (finely chopped)

1 bunch spring onions (sliced)

1 green pepper (diced)

½ cucumber - diced

1 small green chili (finely chopped)

1 tbls olive oil

1 tbls white wine vinegar

Salt and pepper
