1. Place all the vinaigrette ingredients in a small jar and shake well.
2. Mix all salad ingredients together and dress with the vinaigrette just before eating.

100g smoked salmon (torn to pieces)
50g mixed salad leaves (approx 1 handful)
2 tbls sunflower seeds
2 tbls pumpkin seeds
1 fennel (sliced very thinly)
2 tbls capers
3 tbls olive oil
3 tbls sunflower oil
Grated zest and juice of 1 lemon
Salt & pepper

Mandoline or vegetable slicer to slice the fennel very thinly.
